Todays dish…. Sriracha Chicken Quinoa Bowl!!
Ok, so quinoa is made just like rice. 1 part quinoa 2 parts water.
So bring 2 cups of water to a boil then add 1 cup of quinoa. Cover with a lid and turn down heat to a simmer, and let it be.
In a large skillet heat coconut oil over medium heat. Add onions and sauté for 5 minutes or unit soft and translucent. Meanwhile chop your chicken breast into bite size pieces and add to the onions. Cook till browned.
While chicken is cooking, in a small bowl whisk together honey, lime and Sriracha. This step is just how you like it. I always add a ton of Sriracha but if you taste it and think its too spicy add a little more honey till it’s exactly how you like it!
The sweet and spicy is to die for. Next grab you bundle of cilantro and your green onions. You’ll want to chop you green onions pretty small and pull off cilantro leaves from the stem.
Give your chicken a good stir and make sure its cooked all the way through. Once done, add your sweet and spicy sauce to the chicken. Make sure to nicely coat all the pieces. The sauce will thicken in about 5 minutes.
Now lets check the yummy quinoa. You’ll want to grab a fork to fluff it. Once fluffy, add a pinch of salt and mix well. Then spoon out into a bowl, add your chicken and top off with cilantro, green onions and sesame seeds.
See how easy that was?? Now your turn! Enjoy.
What you’ll need:
1 cup Quinoa
2 tablespoons coconut oil
2 lbs chicken, cut into bite size pieces
1/2 onions chopped
1/2 cup Sriracha
1/4 cup Honey
1 tablespoon lime juice
1/2 cup green onion chopped
1teaspoon sesame seeds
